The French expression à la française is an ellipsis of either à la manière française or à la mode française. Because the ellipted word is feminine in both of those expressions, française remains feminine in the shortened phrase, no matter the gender or number of the noun it modifies. Remember that française is an adjective here, so it cannot be capitalized.
