Besan Barfi (burfi) is a popular Indian food sweet with a consistency similar to fudge which is made from chickpea, or gram flour made from dried garbanzo beans.

Recite "Waheguru," and follow these eight guidelines for langar to make Bibek Buttery Besan Barfi, a conscious confection with a divine taste prepared with *prayer and meditation according to bibek principles suitable for any spiritual occasion.

Bibek Buttery Besan Barfi may be served as a tasty sweet snack at Asa di Var and Rain Sabaee kirtan programs, and as an accompaniment for any langar. Besan Barfi is traditionally given to family and friends to celebrate holidays and a special occasions such as a wedding, or birth of a child

  • 2 cups besan
  • 2 cups butter
  • 2 cups sugar (1 lb or 4 cubes)
  • 2 cups water (optional)
  • 5 cardamom pods or 1 tsp cardamom seed
  • 1 almond or pistachio nuts (optional)
  • Cooking Time: 15-20 minutes (cool at least 1 hour)
  • Servings: 6 doz 1/2 diamonds or 4 dozen 3/4 inch squares

Gather the ingredients together needed to make Bibek Buttery Besan Barfi while reciting "Waheguru," as conscious focus on the divine is an important ingredient in any bibek recipe. Much like Prashad, the basic recipe for Bibek Butter Besan Barfi requires just three simple ingredients of equal quantity:

  • besan (chickpea or gram flour made from garbanzo beans)
  • *butter or ghee (salted or unsalted butter)
  • **sugar (granulated, powdered, or confectioner’s sugar)

*Vegetable shortening can be substituted for butter to make vegan Bibek Besan Barfi, but flavor will differ somewhat from besan made with butter, but still very tasty.

Crush cardamom pods while reciting "Waheguru," using a mortar and pestle, or use the back of a spoon to crush pods by pressing against a cutting board or other hard surface. Discard pods husks and save seeds. Alternately use a spice grinder to grind pods and seeds to a powder.

Melt 2 cups butter or ghee while reciting "Waheguru." (2 cups = lb or 4 Cubes salted or unsalted butter, margarine or vegetable shortening as per taste preference.)

Make Sugar Syrup for Besan Barfi (Optional Alternate Method)

Bibek Buttery Besan Barfi is rich and crumbly when made using dry sugar, but delicious. To use dry granulated sugar just skip this step.

**An optional alternate method is to make a sugar syrup using equal amounts of water and sugar. To make sugar syrup (chasni) add sugar to water and boil while reciting "Waheguru."

Add besan flour to melted butter (ghee, margarine or vegetable shortening) and gently stir until well mixed while reciting "Waheguru."

Add whole or crushed seeds to besan and butter mixture while reciting "Waheguru," to flavor Bibek Butter Besan Barfi.

Continue to cook besan in butter. The besan and butter mixture will become bubbly and a bit foamy. Continue stirring as Bibek Buttery Besan Barfi cooks while reciting "Waheguru."

Stir Bibek Buttery Besan Barfi continually while cooking and reciting Waheguru, until besan begins to separate from butter, turns a golden reddish brown, and gives off a delicious aroma.

Lower heat and add dry sugar to toasted besan. Stir besan and sugar together while reciting "Waheguru," until sugar and besan are thoroughly mixed.

**Alternate method: Boil sugar with an equal mount of water to make a syrup. Test the syrup by removing a spoonful and checking for consistency. Dip forefinger into the spoon and press finger together with thumb. Syrup will form a sticky thread between thumb and forefinger thread when ready. Lower heat and pour syrup into besan and butter while reciting, "Waheguru," mix thoroughly.

Remove Bibek Buttery Beasan Barfi from stove, or heat source, while reciting Waheguru. Bibek Buttery Besan Barfi will have a ruffly texture and be a golden reddish color.

Pour Bibek Buttery Besan Barfi into a pan or tray to cool while reciting "Waheguru." Smooth with spatula or the back side of a spoon. Besan Barfi will settle as it cools:

  • Besan Barfi made with dry sugar will be crumbly so it is best to pour it into a round cake pan or 8x8 square pan or plate so that barfi is 3/4 of inch or deeper and let it cool completely.
  • Besan Barfi made using sugar syrup is less crumbly after it cools and can be poured onto a cookie sheet so that barfi is about 1/2 inch deep.

Remove Bibek Butter Besan Barfi from the pan, or tray, after it has cooled completely. Turn pan over while reciting "Waheguru," and gently remove besan that has been made with dry sugar as it may crumble during the removal process if cut into paces while still in the pan.

Bibek Butter Besan Barfi made with sugar syrup may be cut into pieces while still in the pan as it is not quite as crumbly as Besan Barfi made with dry sugar. Cut Besan Barfi into squares and diamond shapes while reciting "Waheguru." To cut a diamond shape, first make parallels cuts the length of the pan. Next make diagnose cross wise parallel cuts. Garnish with almonds or pistachios, or silver foil parchment if desired. Broken or crumbly pieces of Bibek Buttery Besan Barfi, made by either method (dry sugar or sryup), maybe rolled into balls between the palms of the hand, to form Besan ka Ladoo .
