Bibek Gingerbread Ingredients

This traditional gingerbread recipe makes about 4 trays of cookies depending on size and style, and is as much as one person can easily  bake in a couple of hours. Double the recipe if you'd like to refrigerate the dough for baking next day, or later in the week. Triple or quadruple recipe if you'd like to spend a day baking with friends.

Recipe Ingredients Wet:

  • 1/2 cup organic butter (1 quarter pound cube)
  • 1/3 to 1/2 cup *raw brown sugar (made from beet sugar, unbleached, or evaporated cane crystals)
  • 1 cup blackstrap molasses (dark cane syrup or black treacle)
  • 1/2 to 2/3 cup water

Recipe Ingredients Dry:

  • 6 - 7  cups organic self-rising flour (or all purpose flour sifted with 2 teaspoons baking soda and 1 teaspoon salt)
  • 1/2 teaspoon cloves
  • 1 teaspoon cinnamon
  • 2 teaspoons ginger

Bake at 350 degrees from 8 - 12 minutes.

*Ordinary brown sugar is made by adding molasses to cane sugar bleached with bone char.

 When preparing recipes for Sikh sangat it is essential to follow eight guidelines to bibek langar especially remembering to wash hands, cover hair, and keep a meditative mind.

Use a spoon or hand mixer to cream 1/2 cup softened butter and 1/3 to 1/2 cup brown sugar together in a large sarbloh pan, or steel bowl. Blend well until mixture is creamy.

 Blend 1 cup blackstrap molasses with creamed butter and sugar. Mixture will be very dark. Margarine or coconut oil can be substituted for vegan recipe if desired. Flavor will be slightly different, but still delicious.

Mix 6 - 7 cups self rising flour with cloves, cinnamon, and ginger spices. (If using all purpose flour, add 2 teaspoons baking soda and 1 teaspoon salt. Sift flour before measuring).

Combine about two cups of flour mixture with creamy molasses and butter mixture. Then add about 1/4 cup of water and stir into mixture.

Add a another two sof flour alternating with another 1/4 cup of water to gingerbread cookie dough and mix together.

Knead remaining flour bit by bit mixing into dough by hand until stiff enough to roll out. If dough becomes too stiff add a little more water, or save flour to use when rolling out.

Sides of bowl should be free of any bits of dough when gingerbread mixture is ready to roll out, or model into cookies.

Gather a cup or two of gingerbread cookie dough between hands and pat flat to make it round. Dust surface and rolling pin lightly with flour so that dough does not stick when rolling. Roll out dough about 1/8 ich thick. Use holiday cookie cutters to cut shapes from gingerbread dough. You can also model dough with your hands and press into desired shapes.

Place cookies on lightly greased sarbloh tray or cookie baking sheet. Bake in preheated oven at 350 Degrees for 8 to 12 minutes depending on thickness of cookies. Cookies will rise slightly when done.
